Barley |
Barley is a cereal that
is not generally used in day to day cooking, it is however a super source of
protein iron and fiber and can have be tasty too if cook could with well flavored
ingredients. The combination of lentil along with barley makes this soup a
complete source of protein.
The vegetables adds plenty of color and fiber to this nourishing broth, add freshly ground pepper
towards the end.
To make this soup ingredients
required are: 2 tablespoon full of barley soaked for 2 hours and drained, 1/4
cup finely chopped the carrots, 1/4 cup finely chopped tomatoes, 2 tbsp finely
chopped coriander, black pepper and salt as per taste, 1 teaspoon of oil, 2 tbsp whole
Red lentil washed and drained, 1 teaspoon finely chopped garlic, 1/4 cup of finely
chopped white spring onions and 1/4 cup of finely chopped green spring onions.

Method of Preparation: Heat
the oil in a pan, add the garlic and white spring onions and sauté them on a
medium flame for a few seconds, add the carrots, red lentil, barley and 4 cups of
water, mix well and cook 10 to 15 minutes.
Transfer the mixture in
a deep non-stick pan add the tomatoes, green spring onion, coriander, a pinch
of salt and pepper and mix well.
Boil all the ingredients
and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
Barley is good for diabetes as it is high in soluble fiber and
soluble fiber has the ability to form a gel when it mixes with the liquids in
the stomach. The presence of this gel slows down the emptying of the stomach which prevents carbohydrates from
being observed too quickly and raising blood glucose levels. Include barley in
your diabetic diet and get balanced at sugar levels.
